Выбор посуды, в которой подается кофе и напитки на его основе

Позаботьтесь о правильной чашке для каждого вида кофе. Традиционно – кофейная посуда изготавливается из фарфора, а форма и размер определяется именно тем, какой кофе Вы будете пить.
• Например, кофе по-восточному подается в небольших чашках дмитас. Объем чашки (60-75 мл) - это эталон и для приготовления напитка.
• Для эспрессо и напитков, приготовленных на его основе (мaккиaтo, poмaнo, кopeттo и pиcтpeттo)  характерны чашки конической формы с закругленными краями и утолщенными стенками. Объем посуды – 60 мл.
• Чашки для капучино объемом 120-140 мл могут использоваться для кофе по-венски, десертов, например, глясе с ромом, и для некоторых разновидностей эспрессо, таких как кон панна или доппио.
• Американо и фильтр-кофе пьют из специальной кружки-регулятора, объем которой составляет 220-230 мл.

Для подачи коктейлей на основе кофе тоже используется посуда, имеющая свои особенности, например:

• Для коктейлей со льдом и алкоголем:
o бокал с воронкообразной чашей, объемом - 120-160 мл;
o хайбол, объемом 150-300 мл;
o олд фешн, объемом - 180-320 мл;
o тумблер, объемом 200-320 мл;
o милкшейк, объемом 300-350 мл.
• Коктейли на основе холодного кофе пьют из специального бокала фраппе, объем которого составляет 160-200 мл.
•  Высокий бокал айриш кофе – идеальное решение для горячего кофе с добавлением алкоголя, латте и глясе.

Сервируем кофейный стол

Кофейный этикет предполагает тщательную сервировку стола.

• Накрытый цветной скатертью стол украшают свечами, цветами и пепельницами. Для черного кофе используются кофейные чашки, для кофе с молоком подойдут и чайные. Чашка ставится на блюдце, рядом кладется ложечка. Возле чашки располагают небольшую тарелочку и справа кладут нож, если гостям будут предложены тосты. Слева необходимо положить салфетку.
• Кофе лучше всего подать в посуде, в которой он готовился, но это не принципиально. Наливается кофе обязательно за столом.
• Необходимо поставить на стол горячее молоко сливки и сахар – лучше рафинад. Для кусочков сахара уместны щипчики. Ни в коем случае не берите сахар ложкой, побывавшей в кофе.
• Приятным дополнением станет подача к столу небольших закусок и напитков, как спиртных, например , коньяк, так и безалкогольных. Некоторые предпочитают запивать кофе холодной водой.

Существуют и различные способы подачи кофе на банкетах

• Поднос с салфеткой сервируется чашками с блюдцами, сахарницей с щипцами и стаканом с ложечками. Каждый, принимающий участие в банкете обслуживает себя самостоятельно.
• Во втором варианте на поднос ставится два кофейника – один без сахара, другой с сахаром, чашки, стопка блюдец и стакан с ложечками. Держа поднос на ладони левой руки, официант правой, поставив чашку на верхнее блюдце, наливает кофе, ставит кофейник на место и подает чашку гостю.
• Иногда в обслуживании присутствуют два официанта. В руках одного – поднос с кофейниками, второй держит поднос с чашками, блюдцами и ложками.

Секреты пития кофе

• Кофе нужно пить маленькими и бесшумными глотками.
• Нельзя пить кофе с не проглоченной пищей во рту.
• Не обмакивайте в ароматный напиток печенье.
• Чашку держите в правой руке, а блюдце в левой.
• Ложку после размешивания кофе или употребления десерта кладут на блюдце.
• Для пустой чашки существует блюдце – не ставьте ее на стол.
• К коньяку в гостиной подается ликер для женщин и коньяк для мужчин.
